A Healthy Breakfast

My niece has been staying with us during the week to be close to her job. I am impressed with the energy she expends to make her morning meal.
Very often, she takes the time to fry both a potato and a tomato which have been sliced up in olive oil.
Next, she scrambles a couple of eggs on the same griddle.
This hearty and delicious breakfast really smells good in the morning!
